If there’s one thing Aussies know, it’s good seafood, but getting your hands on high-quality ocean fare isn’t always an easy task. Thanks to the arrival of Cooke Seafood, though, that’s no longer the case. Stocked at Coles, the brand is quickly redefining home cooking with its selection of first-class chilled and frozen seafood.
Responsibly sourced from the finest waters around the world, the Cooke Seafood range allows chefs and home cooks to elevate their meals with a variety of new species, from the likes of Spanish Seabass to Patagonian Scallop Medallions.
While the brand, Cooke Seafood, first launched into Australia in 2023, its roots run much deeper. Established by Cooke Inc and Tassal, pioneers in sustainable aquaculture and marine harvest, Cooke Seafood brings six generations of industry expertise to Aussie dining tables – and boy, can you taste the difference.
A rich heritage
Informed by a decades-long legacy of family fishing, Cooke Inc was founded by Gifford Cooke and his sons, Michael and Glenn, in 1985. While it began as a small, family-run salmon farm in Blacks Harbour, New Brunswick, Cooke Inc has since evolved into one of the largest seafood companies in the world, overseeing aquaculture farms and wild fisheries across 14 countries.
With Cooke Seafood now available in Australia, food lovers can finally experience the exceptional quality and taste its parent company is known for. Indeed, over the past 40 years, Cooke Inc has invested significantly in learning, growing and adapting their practices to better marine life, the environment and the customer experience, making it the go-to for world-class seafood.
Quality without compromise
Privately owned and still family-run, the company adheres to the highest of standards across all areas of the business, and Cooke Seafood is no different. On a mission to introduce premium international flavours to Australian kitchens, the brand harvests a diverse range of species (most of which aren’t otherwise readily available to consumers) without sacrificing on quality.
Be it Spanish Seabass from the Mediterranean Sea or Atlantic Cod from the cool waters of Norway, freshness and taste are always maintained thanks to rapid freezing and advanced cooling technologies.
A world of flavour
Whether it’s scallops, sea bass or cod, each species in Cooke Seafood’s varied range is specifically chosen for its unmatched flavour, versatility and quality. Read on for a deep dive into their unique qualities.
1. Spanish Seabass
One of the most adaptable fishes from the Mediterranean Sea, Spanish Seabass boasts a delicate, sweet flavour that pairs well with a variety of ingredients, from starchy potatoes and leafy greens to zesty lemon and tomato. Responsibly sourced from the waters along the coast of Spain, Cooke Seafood’s Spanish Seabass is a rich source of protein and omega-3s and shines as the centrepiece of your lunch, entree or main meal. Due to its firm-but-flaky texture, it’s best served pan-fried, steamed or baked, and is sure to elevate your salads, risottos and rice-based dishes.
2. Atlantic Cod
Thanks to its immaculate buttery flavour and distinctive, large flaky texture, Atlantic Cod is the ideal choice for just about any seafood dish you can make. A good source of protein and healthy fats, Cooke Seafood’s Atlantic Cod is sourced with care from cool Norwegian waters and rapidly frozen to maintain quality. Its complementary flavour pairs well with citrus, herbs, butter and vegetables. Simply oven-bake, pan-fry or air-fry your fillets for a restaurant-worthy dish.
3. Patagonian Scallop Medallions
Take your entree or main to new heights with Cooke Seafood’s Scallop Medallions. A Cooke Inc creation, the medallions are crafted by combining high-quality Patagonian scallops with protein-rich fish gelatine. Generously sized with a succulent texture, Cooke Seafood’s medallions are guaranteed to impress even the most discerning of palates. Pan-fry the scallops over medium heat until well seared, and note their sweet flavour complements herbs, buttery dishes and crispy meats like prosciutto.
