Yuki and Shunsuke Ota started small when they opened Ramen O in far-flung Belconnen in 2020, but such was the appetite for their thick, Kyushu-style tonkotsu that a second (Woden) and then third site (Canberra CBD) followed.
The “Ramen Wow!” remains the signature, the noodles bouncy, the surface scattered with free-range marinated eggs, pickles, a slab of chashu and a splash of leek-infused pork fat for good measure. Yuzu tonkotsu ramen is a refreshing alternative to the classics, while the likes of gyoza and rice bowls round out the offering.
