Gum Bistro was here for a (very) good time, not a long time.
Produce-driven West End restaurant Gum Bistro has closed permanently, making the announcement on social media on Wednesday.
“After what has been a thoroughly enjoyable (albeit short) run, we have made the difficult decision to hang up our aprons and close the bistro,” the post read.
“It’s not been an easy decision to come to, but it’s the right one for us at this time.
“We set out to create a spot where people could come to celebrate with their family, or just prop the bar up for a quick chat on the way home. Thanks to the wonderful community around us Gum became just that.”
Gum’s last service was on the weekend.
Phil Poussart and Lachlan Matheson opened Gum on Boundary Street in April 2024 in the charming weatherboard corner store premises previously occupied by Pasta Club.
It immediately turned heads with its tight, seasonal, shared menu that made a particular point of presenting local produce, with key suppliers and producers listed on the front page, including The Falls Farm, Urban Valley Mushrooms and Rocky Point Aquaculture, to name a few.
Poussart hadn’t replied to requests for comment by deadline, but he and Matheson have significant experience across the industry, including Essa, Pilloni and Hobart’s Fico for Poussart, and Gerard’s, the celebrated Bright in London and Melbourne’s Bar Romantica (both now closed) for Matheson.
In short, don’t expect these two to remain idle for long.
