The officers tried to communicate with him before tensions escalated. The man allegedly kicked one officer in the stomach and punched her in the face, causing her to fall to the ground unconscious.
Paramedics arrived at the scene to treat the 23-year-old woman before transporting her to Westmead Hospital in a stable condition.
A second police officer, 22, was also treated at the scene for minor assault injuries and taken to Mount Druitt Hospital as a precaution.
Police arrested the man at the scene before taking him to Mount Druitt Police Station, and then Nepean Hospital.
Both women have been discharged from the hospital, and a crime scene has been established while police investigate the circumstances of the incident.
