Sorry (not sorry) if you disagree, but winter is the best season and I will not hear another word against it. There are several reasons for this – which I’ll happily share with you over a good bottle of shiraz in front of the roaring open fire at my local pub – but top of the list is the return of the glorious one-pot. For months, the heavy enamel pot sits gathering dust under the sink, but come May it emerges, taking pride of place atop the hob until September, ready for whatever slow-cooked, fall-apart feast comes next. There are few more satisfying pleasures than the sound of a pot quietly bubbling in the background, filling the room with warm, comforting aromas that begin with caramelised onion and garlic and build as the meat softly braises. A slosh of wine here, a stir and a season there, but mostly it takes care of itself, demanding little attention, creating minimal mess and maximum joy along the way. To keep your pot bubbling, too, we’ve pulled together five of Good Food’s most popular one-pot recipes of all time, covering the main one-pot food groups: chicken, beef, lamb, pork and vegetarian. They’re recipes worth bookmarking to return to whenever you and your crew crave something warm, comforting, nourishing and most importantly, downright bloody delicious—Andrea McGinniss
