Embracing both tradition and innovation, Hyoju Park and Rong Yao Soh’s cake shop crafts madeleines that lean into Australian ingredients and Asian flavour combinations, always with a respectful French underpinning. But what to try?
Brown butter with leatherwood honey is a good place to start ($4, now available daily), and the chocolate is a beautiful madeleine to dip into hot coffee. There are also pandan madeleines, others suffused with Earl Grey and Russian honey, yuzu – the list goes on. Beyond the eponymous treat, other baked goods might include financiers, caneles and cookie bars. Inhale, enjoy, stroll.
