Over 35,000 steps and a Guinness: How a dietitian rates this opera singer’s diet

9.30am I’m currently staying in London with a brilliant woman named Esme who has put out raspberries, blueberries, kefir yoghurt and granola. I have that plus a piece of toast before heading out to singing coaching, grabbing a takeaway cappuccino at the station.

12pm Walk around London for two hours, shopping for gifts and souvenirs.

2pm In a cafe I have another cappuccino, then stop to buy a posh cheddar baguette with chicken and pickles.

3.30pm Walk to the gym for 50 minutes of cardio. I am trying to build cardiovascular endurance for Phantom to handle the singing and raked stage.

5.30pm On my way to see The Producers in the West End, I stop off for a pint of Guinness and a jacket potato with chilli con carne.

12am I arrive home, absolutely knackered, with 35,567 steps clocked. I normally don’t do that many but can’t help walking everywhere in this beautiful city!

Top marks for… A brilliant breakfast delivering probiotics, an array of different fibres including prebiotics, polyphenols, slow-release carbs and protein. The jacket potato is an underrated nutritional hero because potatoes are rich in potassium and their skin key for fibre and antioxidants. The chilli con carne filling adds extra fibre and protein.

If you keep eating like this you’ll… Stay fuelled for performance and recovery — those 35,000 steps plus vocal work demand plenty of energy. The biggest nutritional gap looks to be vegetables and fibre later in the day, especially if that baguette is white bread. Over time, a little more plant diversity would further support gut health, immunity and stamina on stage.

Why don’t you try… Switching to a wholegrain baguette or sandwich to boost fibre and keep energy levels steadier through the afternoon. Adding a side salad, greens or a green smoothie alongside lunch or dinner would bump up your vegie intake.
